Green Bean, Corn and Feta Salad



This is a great recipe for a light and healthy salad. Fresh green beans, fresh corn, feta and a light tangy dressing make this a great dish, especially refreshing as a summer meal.

Ingredients:

  • 1 bag green beans 
  • 2-3 ears corn 
  • ½ cup feta 
  • 2 tbls. extra virgin olive oil
  • 2 tbls. apple cider vinegar
  • 1 tsp. granulated garlic
  • 1 tbls. lemon juice
  • 1 tbls. agave
  • dash sea salt & ground pepper

Steps:

  1. Boil green beans in a large pot of water until just tender, about 2 to 3 minutes.

  2. Drain and rinse in cold water or place in a bowl of cold water to cool. Pat dry. Set aside.

  3. Place olive oil, apple cider vinegar, granulated garlic, lemon juice, agave, salt and pepper in a jar and shake until well mixed and thickened.

  4. Add fresh corn kernels and feta to green beans. Add dressing and toss well.
