Watermelon Feta Salad



This salad is perfect for a light summer meal or as a refreshing appetizer. The sweetness of the watermelon and the saltiness of the feta cheese are a perfect combination, and the mint adds a touch of freshness.

Ingredients:

  • 1 large watermelon, cubed
  • ½ cup crumbled feta cheese
  • ¼ cup chopped mint leaves
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Steps:

  1. In a large bowl, combine the watermelon, cucumber, feta cheese, and mint leaves.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper.

  3. Pour the dressing over the salad and toss to coat.

  4. Serve immediately.
