Ingredients

4 medium or large ripe tomatoescut into wedges, and if large, the wedges cut in half crosswise, or 1 pint cherry tomatoes, cut in half

1 cucumbercut in half lengthwise, seeded if desired, then sliced into half circles about 1/3 inch thick

2 tablespoons red wine vinegar

¼ cup extra virgin olive oil

½ cup crumbled feta

¾ teaspoon dried oregano

to taste ground pepper
Summary
This is a Greek salad modified a bit to make it super simple with ingredients that are usually on hand. We make this version almost every night during the summer which makes it a staple in our household.

Add the prepared tomatoes, cucumber, salt, pepper, vinegar, and olive oil to a medium to large bowl. Toss a bit. |
