2 cloves garlic
1 finely chopped shallot
¼ cup of your favorite vinegar
1 tabelspoon Dijon or spicy mustard
1 tabelspoon honey
½ teaspoon crushed fresh oregano
1 teaspoon salt
½ teaspoon pepper
¾ cup good quality extra virgin olive oil

We were lucky to grow up surrounded by great cooks in our family, neighbors, and friends. Our mom Maria was one such great cook. One of the many things she was known for were her salads because honestly, she made the best salads! And while there were several factors involved, her quick go to dressing is what made her salads really stand out!

In a food processor, add garlic, shallot, vinegar, mustard, honey, oregano, salt, pepper and purée. Slowly stream in the olive oil.

You can easily make this in a jar if you don’t want to use the food processor. Just finely chop the garlic and shallot and add it to a jar. Then add the vinegar, mustard, honey, oregano, salt, and pepper and mix well. Now add the olive oil. Cover the jar and shake, shake, shake until well combined with a creamy like consistency.

If you’re really looking for a fast and super easy short cut, instead of the fresh garlic and shallot, use spices instead! Use the same recipe above just substitute 1 tsp. granulated garlic, and 1 tsp. granulated onion.
