Preheat oven to 350°F. |

Lightly grease bottom and sides of 10" spring form pan with olive oil. |

In a large bowl, combine the flour, baking powder and salt. |

In another large bowl, beat the eggs with sugar until well combined. Add the orange zest and mix well. |

In a large measuring cup or bowl, combine the olive oil and orange juice. |

Gradually mix olive oil mixture into egg mixture, Then gradually add in the flour mixture until you form a smooth batter. |

Pour batter into prepared spring form pan. Bake for 45 minutes, until golden brown and tester inserted in the middle comes out clean. |
