1 very large avocadoOr 2-3 small avocados

3 cloves garlic, peeled

2-3 pepperoncinis, seeded & choppedOr about 10 pepperoncini rings. More if you like heat.

1 teaspoon dried oregano

Greek Salsa
-
1 can fire-roasted diced tomatoes, drained

1 small red onion, chopped
-
2-3 pepperoncinis, seeded & choppedOr about 10 pepperoncini rings. More if you like heat.

juice from 1 lime
-
1 teaspoon sea salt, plus more for seasoning
-
1 small English cucumber
-
handful fresh parsley, chopped
-
handful fresh cilantro, chopped

1 tablespoon honey or agave
-
salt & pepper to taste
Summary
We had some pepperoncini, cucumber and feta in the fridge that we wanted to use up and with Cinco de Mayo around the corner, we decided instead of making a salad, let’s make some Greek inspired salsa and guacamole. We were very happy with the outcome so we thought we’d share these recipes with you! We hope you enjoy our Greek salsa and “Oli” (means “everyone” in Greek) guacamole!

"Oli" GuacamolePeel and pit the avocado and add flesh to food processor |

Add crumbled feta, cilantro, parsley, garlic cloves, pepperoncini and dried oregano |

Greek SalsaIn a bowl, add chopped red onions, pepperoncinis, lime juice, and salt. Mix and let sit for a few minutes to meld the flavors and mellow out the red onion |
